Spread the wheat out thin on a cookie sheet or in shallow pans and leave it in the oven at 200°F until it's completely dry. If necessary, rub the kernels between your hands to remove any chaff that.

Notes:Exit 11 Hoppy American Wheat Ale is the second in their wildly popular Exit Series of Big Bottle Beers. Exit 11 is a confluence of styles and ingredients, just as Exit 11 is the point in New Jersey where the Garden State Parkway, the New Jersey Turnpike and several other highways come together.
“Exit 11 is the point on the Turnpike where the Garden State Parkway branches off and takes hundreds of thousands of travelers to the renowned Jersey Shore,” says Flying Fish Founder Gene Muller. “Our Exit 11 Wheat Ale is a fresh, citrus-y summer beer perfect for beachgoers and those who only wish they were headed ‘downa shore’.” Exit 11 is an American-style wheat beer brewed with English ale yeast and three Pacific Northwest hops, Columbus, Palisade and Amarillo. It is brewed with 50% Belgian pale malt and 50% white wheat, and is an ideal summer thirst quencher, with its bouquet of tangerines and apricots. Exit 11 is available only during this one-time release, and only until it sells out across New Jersey, Pennsylvania and Delaware.

look: 4.5 | smell: 4.5 | taste: 4.5 | feel: 4.5 | overall: 4.5 Review from BeerAdvocate Magazine Issue #33 (Oct 2009): Oh yeah, brothers and sisters, this is a style, sub-style or whichever it may be, that we wish would get much more attention ... the Hoppy American Wheat. Unrefined raw appearance, small floaties swirl and dance as the carbonation pushes them around the cloudy golden liquid. The head retention is nothing less than spectacular. Big orangey burst in the nose, smells of freshly broken up clementines with a sprig or two of spearmint. From first sip, the lush, bottle-conditioned, smooth body wraps itself around the tongue. Light bready and doughy biscuit flavors from start to finish; wheat comes off with a hint of spice and the yeast tone is a bit nutty but stays neutral for the most part. While the hop bitterness is not massive, the flavor does get a bit vicious on the taste buds with a pummeling of orange skin, mint leaves, green pepper and black tea. In the midst of the hop chaos is an injection of spicy pepper and tropical fruit from the alcohol. All of this, and it wields a relatively clean finish. Yet again, we run into one of these 'limited release' beers and wish it would have gone straight to the year-round lineup. 1,195 characters

look: 3.5 | smell: 4 | taste: 4 | feel: 4 | overall: 4 Hazy and golden in color. Moderate amount of head and carbonation. Nice aroma-somewhat sulfury and phenolic with a decent level of hops going on. Very crisp tasting. Yeasty and sulfury with a big hop bitterness and flavor. Quite citrusy. The wheat really stands out. Good body-actually quite lite for 6%. The whole thing works, especially the high level of hops. Would be better suited for summer consumption but still a damn good beer. 436 characters

look: 4 | smell: 4.5 | taste: 4 | feel: 3.5 | overall: 4 On tap at Capone's... Appears a hazy light gold with a small white cap that slowly fades into a gentle cap. Scattered rings of lacing are left around the glass. Smell is of huge amounts of American hops. Cascade and Amarillo jump out with citrus and pine, along with lemony and pineapple that is backed up by a sweet bread smell. Taste is of the aromas in a yeasty, bready, balanced flavor that reminds me of a less sweet version of pineapple stuffing. Mouthfeel is medium bodied, bitter, with yeast, hops, and sweet malts battling for power. Delicious . 554 characters

look: 4 | smell: 3.5 | taste: 4 | feel: 4 | overall: 4 Appearance: hazy yellowish orange in color with a 1' head that falls to a thick surface foam sporting some large bubbles. Smell: wheat, grass, and asome floral hop bitterness is pleasant and easy to detect. Taste: nice malt base with orange and lemon citrus, bubblegum, floral hop bitterness, and a bit of warming alcohol. Mouthfeel: medium body. Crisp from start to finish. Aftertaste is short but refreshing. Drinkability: this beer went down easily and had a nice overall flavor. Worth a try if you can still find a bottle. 531 characters

look: 4 | smell: 4.5 | taste: 4 | feel: 4 | overall: 4 The beer pours a hazy pale gold color with a thick frothy white head that slowly fades to lacing. The aroma is good. It has a has a really nice, dry wheat malt scent along with some subtle breadiness. The hop aroma is solid with a moderate bitterness. The taste is good. It has a smooth wheat flavor; dry and light. The hop character is there , but not too aggressive. The mouthfeel is fine. It is a medium bodied beer with adequate carbonation. This is a good drinking wheat ale. I'm a big fan of the hops in this one. 519 characters

look: 3.5 | smell: 4.5 | taste: 4 | feel: 4 | overall: 4 750ml bottle. Capped. Purchased from a buddy in NJ who shipped it to SC. Appearance - A banana-yellow color greets you as the pour fills the glass. Hazy with an ample head forming as the glass fills. Careful, easy to overpour if you don't watch that head. Retension is good with a light lacing remaining as the head fades to a thin ring. Lively carbonation explains the vibrant head and also the retension. Very inviting. Smell - With the words 'Hoppy American' in the name, you would expect to have this beer live it up it's name, and it does. A bright/refreshing hop whiff combines with some biscuity/grassy aromas as well. A nice pear/fruity presence as well, closing out the clean nose. Taste - Let's start from the finish and work backwards, shall we? A nice tart/lip-smacking finish, due to the zesty hops. Very nice. The middle lends itself to a summer thirst-quenching nature with much citrus, almost peach-like tastes. My main enjoyment comes from the lack of a overbearing hop middle-game. The opening is a cascade of carbonation leading to some strong wheat/floral notes. Mouthfeel - The ample carbonation lends a fizzy almost seltzer-like quality. Don't know if this is good or bad, just very...different... from what I was expecting. Does provide an excellent palate cleansing feel. Light to medium in body. Drinkability - Not sure how I can compare this to (let's say) FFF's Gumballhead, currently the top of the American Pale Wheat Ales. However, this a an excellent summer thirst-quencher. Too bad I'm reviewing this on a rainy October evening, rather than a sunny July afternoon. Well done Flying Fish on a great drinker. 1,645 characters

look: 4 | smell: 4 | taste: 4 | feel: 4 | overall: 4.5 Nice typical wheat coloring. Poured into a bunch of different specialty Belgian glasses. Really interesting offering from the Exit series. Some tartness of a wheat beer. But the hops dominate. But not to such an incredible level that all wheat characteristics go away. Makes it quite drinkable. Suitable for hop heads and for wheat beer lover alike. Lots of Amarillo hops in this one. Good pine notes. 403 characters

look: 3.5 | smell: 4 | taste: 4 | feel: 4 | overall: 4 The beer pours a slightly hazy golden honey color with minimal head retention and OK lacing. On the nose, there's something of a light tropical fruit flavor, with a touch of honey and ginger. Flavor profile in this beer is it's best aspect, with some nice hoppy bitterness superimposed upon lemon, some noticeable wheatiness and light spice. Mouthfeel in this beer is very, very light (but not watery), and drinkability is very good. This is a very easy to take beer, with flavors that are not what one typically encounters in an American wheat beer. Pretty nice. 565 characters

look: 4.5 | smell: 4.5 | taste: 5 | feel: 5 | overall: 5 Flying Fish- Exit 11 A- Bright hazy yellowish orange with a huge 1/3 the glass head. Very foamy and messy lacing. S- Big smack of Amarillo hops! Huge citrus hops with a light yeasty wheat and caramel malt. T- Big sweet grapefruit/ tangerine hops blend nicely with caramel malt and wheat. Well balanced with the hops slightly dominating throughout. M- Big sweet juicy hops everywhere with a thick malty body and a juicy sweet hop finish. Overall- Was hoping for something decent here and was blown away! This is 1 of the best beers I've had this year! To all the Gumballhead fans give this 1 a try! 600 characters ![]()

look: 3.5 | smell: 4 | taste: 4 | feel: 4 | overall: 4.5 Barely blurry Golden Delicious apple peel with a faint blush of apricot orange. Here's hoping that more yeast murk things up eventually. A pillowy crown of alabaster colored foam looks pretty good as it melts. Stickier lace would have been better than the scattered scraps of suds that barely cling to the glass. At least one member of the hop bill would have been easy to guess: the orange citrusiness of Amarillo was obvious on the pour. Columbus and Palisade are in there too. 50% Belgian pale malt and 50% white wheat don't add much to the olfactory party. Then again, there may be a little tangy wheatiness. Exit 11 is pretty much as advertised. In other words, it's a generously hopped American pale wheat. If you've had Gumballhead, you know what to expect. This is delicious beer that has an impressive amount of refreshing gulpability. So far, it's disappearing like nobody's business. There isn't much wheatiness on the palate. Due to a light lushness provided by the wheat malt, the beer feels like a wheat ale more than it tastes like one. English ale yeast doesn't add flavor either. Which leaves... a solid thwack of citrus zesty American hops. Tangerine peel, white grapefruit, lemon and a hint of pine. Good stuff. I'm thrilled that FFBC gave us a respectable ABV. Screw sessionable (which the beer is anyway), there's no sense in losing the flavor mojo by brewing something in the 5.0% range. The mouthfeel is on the light side... but it's a freakin' pale wheat, what did you expect? Flying Fish Exit 11 is not as good as Three Floyds Gumballhead. That's okay, no other beer of this style is either. These guys have a hit on their hands with the second Exit Series ale. If you like pale malted beer that has its flavor focus squarely on American hops, then you'll probably like it too. Don't wait too long now, the hops are fading as we speak. look: 4.5 | smell: 4 | taste: 4 | feel: 4 | overall: 4.5 Large bottle, w/o freshness info. Pours slightly cloudy(cloudier towards the later pours, as the yeast get included into the flow) golden amber... The head is large/huge and lovely, real nice retention, and a slow melt down. Thick blotches of lace on the glass. Grapefruit/amarillo hop nose. Nice hoppy wheat, I love amarillo hops, so the load poured into this brew results in a fruity mango/grapefruit love fest. Love the style, love FF's effort here, wish I could get it locally. 481 characters

look: 4 | smell: 4 | taste: 4 | feel: 4 | overall: 4 Appearance: Pours a hazy golden color with a bit of an amber tinge; the head is rocky and small clumps of lace attach themselves to the side of the pint glass Smell: Floral and pithy, with an orange peel character Taste: As an American wheat, the base malt flavor is clean but the pithy citrus flavors quickly intrude; by mid-palate, a distinct sourness takes over and lingers through the finish Mouthfeel: Light to medium body with crisp carbonation Overall: Why oh why did I let this cellar for so long; I have adjusted my ratings as if I were enjoying this in its youth rather than in its old age - would love to see Flying Fish brew this style again 657 characters

look: 4 | smell: 4 | taste: 4 | feel: 4.5 | overall: 4.5 750 ml bottle, thanks to grub for sharing! Pours a clear yellowish gold, nice and bright, very thick white head forms, big bubbles, settles down to a medium sized chunky layer and ring, big lacing sticks all over, looks good. Smell is nice, lightly grainy, toasted wheat, some floral, strawberry fruitiness, light citrus, honey sweetness, a bit of grapefruit, nice fruitiness going on, but still pretty clean aromas. Taste is similar, honey sweetness up front, some wheat, toast/biscuit malts, lightly grainy through the middle, a touch of fruit, grapefruit and some floral, really nice balanced bitterness, very crisp. Mouthfeel is light to medium bodied with medium carbonation, very balanced and refreshing. This is a nice beer, thanks Russ! 748 characters

look: 3.5 | smell: 3.5 | taste: 3.5 | feel: 3 | overall: 3.5 On tap at Capones. Poured a medium and cloudy/hazy yellow color wtih a smaller sized white head. Lacing left on the glass. Aromas of wheat, some yeastiness, with lighter citrus and a lighter fruitiness. Tastes of wheat and citrus. A drinkable wheat ale that would be perfect after being outside on a hot summer day. 317 characters

look: 4.5 | smell: 4.5 | taste: 4.5 | feel: 4.5 | overall: 5 Lovely, fruity and complex. This is a beer that invites slow contemplation. Let it open in the glass and experience the way it changes with time and temperature. Pours a hazy light golden, like apple juice (not the first time that this beer will show a lovely apple-like character). The head is robust, dense and bright white, with a torrent of carbonation from the pour. The aroma is fruity, with apricot, pineapple, and apple all over it. The flavor is sprightly and champagne-like, with apple, and pineapple overlying the slightly sour wheat malt, a delicious, acidic balance. The mouthfeel is bubbly and light, much like a champagne or light sparkling cider. This is a very nice beer. I wish Flying Fish would make it a regular, or at least a summer seasonal. It would cut through the sticky, humid summers of South Jersey and Pennsylvania perfectly. 856 characters

look: 3.5 | smell: 2.5 | taste: 2.5 | feel: 3 | overall: 2.5 Bottle shared by PWoods. Pours a hazy gold in color. White film of froth sitting atop the beer. Smell is lemony, but there's some sort of a cleaning solution smell as well in the nose. Taste is watered down lemonade. Very high carbonation and pretty bitter in the mouthfeel. Can't get past the watered down lemonade taste. Just not digging on this one at all. Could possibly be a good lawnmower beer on a blistering hot day. This could be at best refreshing in this scenario. 477 characters

look: 3.5 | smell: 4 | taste: 4.5 | feel: 3.5 | overall: 4.5 Picked this up at the Foodery in Philadelphia, fresh indeed. App: Pours a smooth cloudy, pale yellow straw color. A small one finger head settles into a light cap with moderate lacing. A very refreshing and inviting looking beer even before tasting it. I dig the label too, and no shame in promoting the theme that drives the special series - I 95. Aroma: Incredibly fresh and fruity, not too thick or strong as I was expecting. A strong fresh grape aroma followed by peach, slight pear and an undercurrent of fruity hops, reminiscent of a New Zealand strain. The wheat characteristics are light and not dominated by the standard wheat beer profile (banana, clove). Very nice. Taste: The overwhelming upfront flavor is Concord grape, especially the grape skin. The flavor is hard to describe, but it has an almost artificial grape flavor that's super fresh, light, slightly biting and delicious. That flavor is followed by a light bitterness then a moderate wheat flavor, fruity hop follow through and a super clean finish with little lingering aftertaste. A nice full flavor that's not sweet or cloying, just fresh and complex. Mouthfeel: Light bodied with present but soft carbonation. Clean and crisp with slight lingering stickiness in the mouth. Drinkability: The only thing not keeping me from drinking a lot of this beer is the limited release cost. 1,362 characters

look: 4.5 | smell: 3.5 | taste: 4 | feel: 4.5 | overall: 4.5 Pours a nicely carbonated, hazy, pale golden yellow. It has a large, meringue like, white head that leaves decent, spotty lacing. The smell is lemon for me. The taste is happening but sort of subdued. There is the lemony citrus flavor, some wheat, a bit of spicy pepper and no noticeable alcohol or bitterness. Mouthfeel is thin but not inappropriately so. Even though the body is light it does drop some nice flavor on the tongue along with very good carbonation. This is very drinkable. Maybe it's too much alcohol for two bottle but this glasses would be very nice. An interesting, drinkable beer. Along with the others in the Exit series it appears that FF is stepping it up, good for them. 694 characters
